Town's salads and greens are delicate — showcased in an appreciative way. Fresh herbs, allowed to play a real role, have also found a happy home. A salad of marinated beets, Ka'u orange, watercress, gorgonzola and poppy seeds ($6.50/$8.50) wouldn't be as refreshing without an invigorating boost of whole mint leaves.

Founded in 1998, Twin Bridge Farms is a 250-acre operation in Waialua that produces fresh asparagus all year round. “Our asparagus is in the market hours after harvest,” says Milton Agader. “Quality is our first priority in everything that we do.”
