Description

If you like lychee and or haupia, you will probably like this pancake topping /dessert! Sound unusual? Maybe only if you're not from Hawaii, but don't feel left out, even some locals haven't tried this one out yet. Either way, it's a winner! Creamy, sweet, refreshing, smooth and subtly addicting! Ingredients

  • lychee
  • coconut milk
  • heavy cream
  • lemon juice
  • salt
  • cornstarch slurry (2:1 water to cornstarch)
  • vanilla bean

Instructions

Combine everything in a pot except the cornstarch slurry. Bring to a boil and stir to homogenize mixture. Turn heat down to medium and add slurry slowly, but stir vigorously to incorporate evenly. Empty contents in a shallow pan to cool in refrigerator to firm slightly. Be sure not to add too much slurry. There are no measurements for this recipe. Everyone's preferences may vary, so judge measurements to taste. Have fun and enjoy!

Notes

If you rather have a normal haupia consistency, use a powdered mix, then add lychee and the rest of the ingredients except the coconut milk and the slurry. This will be the easiest way to manipulate a consistent product. Find these ingredients, and enjoy this recipe with a bunch of "pupu kine" found at your nearest Times Supermarket! Shoots Den!
