Over 80% of the tomatoes in stores is local according to Larry Jefts, owner of Sugarland Farms in Kunia, most of which comes from his farm. Besides having a hybrid variety cultivated exclusively for his far, he also has a $5 million sorting machine cranking out all the fruit. Executive Chef Grant Kawasaki talks with Larry about his special variety and how he supplies majority of the state with his delicious fruit.
