Maui Filet of Beef Saffron Risotto, Green Onion Coulis, and Roasted Hamakua Ali'l Mushrooms

Ingredients

16ozfilet of beef
2ozbeef jus
1minced shallots
4ozarborio rice
2ozwhite wine
1bay leaf
1Tparmesan cheese
4hamakua mushrooms
0.5tsaffron
1bngreen onions

Instructions

Beef: Sear filet of beef. Put into oven at 235 degrees, until medium-rare. Risotto: Saute Shallots in olive oil. Add rice and saute until translucent. Add white wine, saffron and bay leaf. Reduce down and then in 4 oz amount, pour stock into pan and simmer rice until soft. Finish with Parmesan cheese and cold butter. Roasted Hamakua Mushrooms: Saute in olive oil and finish with butter. Green Onion Coulis:Blanch green onions and puree fine. Season with salt and pepper and emulsify with olive oil. Strain thru using cheesecloth
