Maui Filet of Beef Saffron Risotto, Green Onion Coulis, and Roasted Hamakua Ali'l Mushrooms
- 16ozfilet of beef
- 2ozbeef jus
- 1minced shallots
- 4ozarborio rice
- 2ozwhite wine
- 1bay leaf
- 1Tparmesan cheese
- 4hamakua mushrooms
- 1⁄2tsaffron
- 1bngreen onions
Beef: Sear filet of beef. Put into oven at 235 degrees, until medium-rare.
Risotto: Saute Shallots in olive oil. Add rice and saute until translucent. Add white wine, saffron and bay leaf. Reduce down and then in 4 oz amount, pour stock into pan and simmer rice until soft. Finish with Parmesan cheese and cold butter.
Roasted Hamakua Mushrooms: Saute in olive oil and finish with butter.
Green Onion Coulis:Blanch green onions and puree fine. Season with salt and pepper and emulsify with olive oil. Strain thru using cheesecloth
