Description

There is no question, fresh Ahi and anything else go hand in hand, right? Well some people may debate that statement, especially if the other key ingredient is Natto, which is Japanese fermented soybeans! However, many many others, perhaps millions of Natto loving consumers, may attest that Natto, especially partnered with fresh Ahi, is an amazing combination! We agree with the pro's at Hanapa'a Sushi Co. that Ahi Natto is a true local favorite of many people that are indeed Hawaiian Grown! In fact it's one of Hanapa'a Sushi Co's top ten items sold at their 1st Times Supermarket location in Kaimuki! Ahi and Natto, oh nah?!

Ingredients

12ozcooked sushi rice
6ozfresh ahi (cubed or diced)- hawaiian big-eye tuna is best
6ozhikiwari natto or maui natto (any brand of your choice)
1dshawaiian salt (to taste)
2tsesame oil
1Tfurikake
2tcucumber diced (japanese cucumber)
2Thari hari zuke (chopped pickled vegetables)
1Tamazu shoga (red pickled ginger)
1Tgreen onion (finely sliced)

Instructions

In a mixing bowl, simply combine the fresh fish, sesame oil and salt. Keep cold. On a shallow serving bowl or plate, layer sushi rice, furikake, natto, fresh fish mix, hari zuke, cucumbers, amazu shoga, green onions and kaiware (radish) sprouts, in this order. Enjoy!

Notes

To add more flavor, add a teriyaki glaze as a drizzle to go with the Natto flavor. Also wasabi and soy sauce is the ubiquitous choice for this dish as a base condiment. Add thinly sliced Ewa Sweet onions to give the dish extra texture and flavor. Feel free to substitute any other sashimi grade fish with this recipe.
