Based on childhood memories of the feelings and flavors of Hawaii, Roy invented what he refers to as “Hawaiian Fusion© Cuisine” — a tempting combination of exotic flavors and spices mixed with the freshest of local ingredients, always with an emphasis on seafood.
Born in Tokyo, Yamaguchi vividly recalls visits with his grandparents to Maui, where he had his first tastes of fish, crab, octopus and lobster bought fresh at oceanside piers.
Founded in 1953 by a decorated World War II combat veteran, Charles Okimoto, has prevailed through the years by the sheer persistence which is certainly an Okimoto family trait. The farm began with crops of guava and papaya which gave way to daikon and green onion. The farm primarily grew herbs until an entire crop of basil was wiped out by disease in 1990. By then, Dean Okimoto had taken over and the loss was severe enough to cause him to consider giving up farming.
This week on Hawaiian Grown TV, Grant Kawasaki visits the world famous Nalo Farms with Owner/President Dean Okimoto as they tour the farm and find out the special mix of crops to make the unique blend of Nalo Greens found at Hawaii's top restaurants. Then we follow the crop to one of Hawaii's favorites restaurants, Roy's Hawaii Kai as Executive Chef Ronnie Nasuti prepares a Nalo Greens Trio salad sampler. Last, Special Guest Rick Rock from Rick Rock Productions joins us and shares the happening nightlife spots in Honolulu.
